From vodka to tequila, the world is finally waking up to the fact that many quality spirits – the key word being ‘quality’ – actually benefit from being sipped rather than slammed, to appreciate the complex aromas on the nose and intricate flavours on the palate. Just like wine, really.

Now, rum is finally getting its moment in the sun. Long-dubbed ‘the next gin’, they’re not just for mixing and muddling into delicious cocktails that immediately transport you to sunnier climes – namely, the Caribbean. Sipping rums will be all the rage this summer, taking the key ingredient from classic drinks like mojitos, caipirinhas and punches and making it the star of the show.

Rum is a super-diverse category as not only do you have different styles – from using molasses and virgin sugar to cane juice and more – but varied geographical, cultural and terroir influences, including huge differences in distillation and fermentation styles,” explains Ryan Chetiyawardana, famed mixology maestro and the man behind top bars such as White Lyan in Super Lyan, Dandelyan, Cub, Lyaness, Silver Lyan and Seed Library.

“And that’s not even considering consumer-facing categorisations with varying meanings such as light, dark and navy... But rum is also one of the most historic and prevalent cocktail spirits, and as people have become more versed in it as a category, it’s increasingly being recognised as a great sipping spirit alongside the great Cognacs and whiskies of the world.”

He adds: “We’ve seen a great response to sipping finer marques from bigger brands such as Bacardi, Diplomático and Havana Club, through to cult favourites such as rare Appleton, Foursquare, Hampden and Caroni, as well as bespoke blenders doing some of the most innovative work such as Black Tot or Equiano, plus new countries entering the category such as the UK, Mexico and Japan.”

Goslings Spirited Seas Ocean Aged Bermuda Rum Volume Two

The rums used to make Goslings Spirited Seas – dark, aged and Bermudan – are loaded onto a ship after being initially aged in first-fill Bourbon barrels with the liquid aged for another year at sea while it travels back and forth between its native island and New Jersey (covering nearly 60,000 miles over more than 40 weeks).

According to the maker, the stormy waters and sea air has an extraordinary effect on the blend, helping it interact with the charred American white oak over every wave to extract all of the barrel’s flavour and impart a unique maritime influence.
